This is the best recreation I can find of the apple pie that my grandmother used to make.
Core, peel, and slice 6 cups of apples (1/2 of it should be granny smith). Lay them out on some plates and sprinkle the lemon juice over them. Let them sit for 5 minutes.
Line a 9 inch pie pan with one pie crust. Cover the edges with foil. Bake at 350° for 5 minutes to cook the bottom of the crust.
Mix all the dry ingredients in a large bowl. Toss the apples in the sugar mixture.
Lay the apples coated in the mixture in the pie crust - pile them in, they will shrink some during cooking. Top with the other pie crust and pinch the edges together. Cut some small decorative slits in the top to keep the crust from cracking.
Again, cover the edges of the pie with foil so they won't burn. Cook for 40-45 minutes at 425°. Take off the foil for the last 15 minutes of cooking. Remove from oven, top with caramel topping and ice cream. Eat!
